For any person to be well nourished, the cells of his or her body must obtain daily the proper amounts of all the nutrients they require. This is no simple problem for the average American, since contemporary diet patterns represent relatively recent innovations in nutrition. They are diets markedly different from any ever consumed during the long and complex human development.
However, many people have become interested in nutrition. Intuitively, many have come to recognize that nutrition is fundamentally important for a sense of well-being and disease prevention. The vast accretion of folly, ignorance, and neglect that has so long beset the field of nutrition is gradually being washed away by an irresistible stream of facts about food and health.
Many recent reports have demonstrated close and vital relationships between foods and health. Leading nutritionists say the average American diet, especially the diet of children and teenagers, is the cause of alarming increases in chronic illness. At recent congressional hearings on public health and environment, extensive modifications of the American diet were suggested to help reduce the ravages of the nation’s number one killer, coronary heart disease, and the increasingly high incidence of atherosclerosis. Evidence now shows that dietary modifications are capable of ameliorating, preventing, or possibly even reversing the risk factors associated with obesity and with high levels of fat in the blood.
The important role of nutrition in health problems and disease is being more widely recognized and acknowledged.
Even for knowledgeable consumers, the making of wise day-to-day food selections presents many problems. Some of the obstacles that now beset even the most discriminating shoppers include the barrage of advertising of food products high in starches, sugar, and fats of an undesirable type; difficulties in obtaining good quality protein foods within family budgetary limitations; the presence of many hazardous substances in the food supply that are introduced intentionally as well as accidentally; and a lack of knowledge on the freshness of perishable foods. In addition, it becomes necessary for the average consumer to withstand many powerful pressures from advertising, foods hawked to a hungry public by master salesmen, and the lures of convenience and time saving as well as attractive packaging.
Ultimately, the informed consumer’s food selections must be made by a relatively simple guideline: choice of a varied selection of foods as close as possible to their natural unprocessed state. This list includes meats, fish, fowl, eggs, produce, vegetable oils, nuts and grains. These staples, individually described in Health and Nutrition Information, are the foods that are most likely to supply day by day all the nutrients essential to the health of the body’s cells. Highly processed, factory-made, durable foods containing complex, unfamiliar ingredients such as dyes, preservatives, emulsifiers, stabilizers, and acidulants, should be avoided, so far as possible. Careful food selections, day by day, fulfill an old Balkan axiom, “Good health is in the pot.”
