Also known as endive, escarole is a green, leafy vegetable often used in salads. Very low in calories, endive is a good source of many beneficial nutritional elements. Escarole is especially rich in calcium, which aids in relaxing nerves and in inducing sound sleep and often helps against arthritis pains, migraine headaches, and menstrual cramps; and it is an outstanding source of vitamin A, which helps against skin and eye problems and many kinds of infections, especially of the upper respiratory system.
