4 oz fresh duck (uncooked; 18% bones) contains:
303 cal;
14.8 gm protein (complete);
26 gm fat;
9 mg calcium;
163 mg phosphorus;
1.5 mg iron;
.07 mg B-1;
.18 mg B-2;
6 mg niacin.
One of the higher calorie members of the poultry family, fresh duck meat also has a large proportion of fat, so it cannot be as highly recommended for either weight watchers or cholesterol counters as are other types of poultry. Both the calories and the fat are greatly reduced, however, if the skin, and the fat attached, is removed and only the flesh is eaten. Duck does provide a good amount of iron, B-2, and niacin, beneficial against anemia, low blood sugar (the protein also helps here), many eye problems, abnormalities of the gums, lips, or tongue, and the niacin, especially, has been used against depression of many types and in some cases against alcoholism.
