145 phosphorus;
1.3 mg iron;
.06 mg B-1;
.15 mg B-2;
5.5 mg niacin.
Although essential to the denouement of A Christmas Carol, goose meat is more dispensible as a poultry element in the diet because of its relatively high fat content and low level of protein. However, it is rich in phosphorus, necessary for strong bones and teeth; in iron, for prevention of iron deficiency anemia; in B-2, essential to the structure of a number of enzymes and helpful against many eye problems; and in niacin, an aid to healthy gums and helpful against many forms of tension, irritability, and depression. Like most poultry, goose contains no carbohydrates, but it is one of the highest of all types of poultry in terms of calorie count, so not the best bet for weight watchers.
