Known as string beans, green beans, or snap beans, this versatile vegetable has a near relation in the yellow variety most often called wax beans. Both the green and the yellow types are rich in vitamin A, an aid against infections and harmful bacterial growth and necessary for reproduction and during pregnancy (for both mother and child) and during breast feeding; both are also good sources of B vitamins, needed for growth and energy and for offsetting the effects of lack of sleep or of too much alcohol. Both types are low in calories and rich in potassium, making them beneficial for reducing diets, since potassium aids in the utilization of sugar for energy and helps against water retention, high blood pressure, and low blood sugar, often problems during reducing diets. For better nutritional benefit and for better flavor green beans should be quick cooked and served still crisp enough to snap. These beans are good as a cooked vegetable With various seasonings, cold in a mixed bean salad, or raw in a salad or as an appetizer with a dip.
