Ham, a specially treated often smoked, salted, or otherwise preserved cut of pork, has from 20 to 50 percent saturated fat in its leaner cuts. It does provide a good amount of protein, needed for growth and vitality; of potassium, necessary for enzyme reactions and maintenance of energy and muscle tone; of sulphur, an aid to healthy hair, skin, and nails; and of niacin, helpful against susceptibility to gum infections and canker sores as well as against some forms of depression, moodiness, and irritability. However, because of its high proportion of saturated fats and because of the effects of the various salting and curing processes, ham is not the most healthful of foods, especially for those bothered by high blood pressure, high cholesterol level, hardening of the arteries, or overweight. It should also be infrequently eaten by anyone on a low sodium diet.
