Resembling a tiny orange, with an edible rind, the kumquat is a citrus fruit, supplying a fairly good amount of vitamins A and C. The vitamin A can be an aid to normal vision and healthy skin and helpful against dry skin, dry hair, and dandruff. Vitamin C may be a help against infections and allergies, and an aid to healing and the formation of strong connective tissues. Kumquats are most often found candied or in preserves; their nutritional value is thus diminished by the processing and the addition of preservatives and large amounts of sugar.
