Lima beans are a good source of incomplete protein, especially beneficial when eaten at a meal with a complete protein; however, they are relatively high in carbohydrates, needed for energy but often oversupplied in the American diet and especially to be watched by those on reducing diets. Limas supply a good amount of iron, helpful against iron deficiency anemia; of B vitamins, necessary for the production of energy and for growth; of potassium, also necessary for changing sugar to energy and for the maintenance of proper heart action, muscle lone, and health of the nervous system; of vitamin C, necessary for general good health and maintenance of strength and tone of many parts of the body; and of magnesium, essential in the body’s synthesis of protein nod for the proper utilization of carbohydrates and fats. Baby lima beans are somewhat richer in nutrients and lower in calories per portion than are the mature beans such as Fordhook limas. Dried lima beans lack the vitamin A and C contents of the fresh and frozen beans.
