13 gm carbohydrate;
21 mg calcium;
.24 mg iron;
2 mg sodium;
35 mg potassium.
Boiled down from the sap of maple trees, pure maple syrup provides a good amount of calcium, needed for strong bones and teeth, for proper functioning of the heart, nerves, and muscles, and for normal clotting of blood; and potassium helpful in maintaining proper muscle tone and needed for many enzyme reactions especially that of changing sugar into energy. It is also thought to be fairly rich in B vitamins needed for growth and energy. Maple syrup is one of the more nutritious sweetening agents but it does provide a high proportion of carbohydrates, usually not lacking in the American diet, and since it usually accompanies a highly starchy food such as pancakes or waffles, a meal including maple syrup often ends up being highly over-stocked with carbohydrates.
