Used much like spinach or Swiss chard, mustard greens may help in delaying the onset of senility, promoting longevity, and combatting night blindness, dry skin and susceptibility to gum infections. These benefits are due to their rich supply of vitamins A and C. Mustard greens are also rich in calcium, essential to the formation of healthy bones and teeth, to the proper functioning of the heart and nerves, and helpful in preventing insomnia, nervousness, and muscle cramps and spasms, especially those during menstruation.
