When referring to the nutritional composition of foods, these factors should be kept in mind:
- The care with which foods are stored, handled and cooked influences their nutritional value. Many foods lose important nutrients through over-cooking.
- Handle cooking utensils carefully. Scouring pots with steel wool can release harmful minerals, bringing on problems like arthritis.
- Some earthenware pots have lead-base glazes, and cooking or serving in them can put lead into food, don’t use them unless you are absolutely sure of the basis of the glaze.
- Throw out burnt food—it’s lost most of its nutritional value anyway.
- Calories are important, but it is just as important to consider what else the food is providing. Read labels and check ingredients carefully.
- Weight-reduction diets should not neglect necessary nutritional elements—respect your body chemistry!
