Alfalfa herbs

No official nutritional analysis of alfalfa available. Leaves, seeds, and sprouts of alfalfa herbs contain good amounts of vitamins A, B-6, D, E, and K and the minerals calcium, phosphorus, iron, sodium, potassium, magnesium, chlorine, and various trace elements, as well as having a high proportion of incomplete protein. Alfalfa sprouts are especially low in calories and carbohydrates, making them good for weight watchers, and are especially good in salads, soups, vegetable dishes, and as an alternative to lettuce on sandwiches (adds an interesting, fresh taste). Sprouts of alfalfa are an especially good source of vitamin K, essential for the proper clotting of blood. They are also especially rich in calcium, which aids in building strong bones and teeth, helps prevent muscle cramps (including menstrual cramps), and aids, in certain cases, in alleviating premenstrual water retention, excessive sensitivity to pain, and insomnia. (See also bean sprouts.) Alfalfa tea is easily digested and does not have the harmful side effects that regular tea has, besides providing much more nutritional value than does regular tea.
