American Chestnuts
2 oz American chestnut (about 6-8 large, raw) contains:
110 cal;
1.65 gm protein (incomplete);
.85 gm fat;
24 gm carbohydrate;
15 mg calcium;
50 mg phosphorus;
.9 mg iron;
3 mg sodium;
257 mg potassium;
.12 mg B-1;
.125 mg B-2;
.34 mg niacin;
19 mg magnesium.
One of the more versatile nuts, american chestnuts can be cooked and mashed to be served as a vegetable, ground to be used as flour, glazed to be used in desserts or simply roasted (by an open fire, if one is available) and served as a snack. compared with most other nuts, the chestnut is relatively low in both calories and protein, while high in carbohydrates, so it is not as good a food source. But it does supply a good amount of potassium and magnesium, beneficial for heart problems and high blood pressure and necessary for the body’s utilization of carbohydrates and fats.
