A kind of cabbage, Brussel sprouts are bright green when fresh, without wilted or yellowed leaves. They have a high sulphur content that breaks down when they are soaked in water or overcooked, giving them a strong flavor and causing them to form gas during digestion. They are an excellent source of vitamin C, which aids against infection, bruises, tooth decay, hemorrhages, pyorrhea and bleeding gums, and is a general aid to all bodily functions.
