Cauliflower, especially if you take it straight without the Hollandaise is very low in calories. Uncooked, it can make an interesting addition to salads. But cauliflower is rather high in roughage and may tend to produce gas. It is an excellent source of B-1, B-2, and C aids again problems as diverse as low blood sugar, shingles, colds and infections, allergies, heart problems, cataracts, pock circulation, and hives.
