Carob nutrition
1 oz carob (powder) contains:
51 cal;
1.3 gm protein (incomplete);
.4 gm fat;
23 gm carbohydrate;
100 mg calcium;
23 mg phosphorus.
Derived from the pod of a tree grown in the Mediterranean region, carob has been used as a food ingredient since biblical times. Today, carob is often recommended as a substitute for chocolate or cocoa flavorings in fudge, cakes, cookies, brownies, candy, puddings, milk shakes, and other such foods, since carob does not have many of the deterimental side effects that the chocolate flavoring agents do. Carob provides a good amount of calcium, for strong bones and teeth and for proper functioning of the nerves; of phosphorus, also an aid to strong bones and teeth; and reportedly of potassium, essential for the health of muscles, heart, and nerves. Carob is very low in fat and moderate in calories, but it provides a large amount of carbohydrate, so it wouldn’t be very helpful as a regular part of the diet for persons who are weight watching.
