No relation to the globe artichoke, the Jerusalem artichoke is an underground bulb, rather like a potato. It is low in calories when fresh, but during storage its inulin (a form of carbohydrate) converts to sugar, greatly increasing the caloric value. Since inulin does not convert to sugar in the blood, fresh Jerusalem artichokes are good substitutes for starchy vegetables such as potatoes in both weight-loss and diabetic diets
