White Sturgeon Caviar

White sturgeon caviar

1 oz caviar (about 2 tsp) contains:
74 cal;
7.6 gm protein (complete);
4 gm fat;
78 mg calcium;
100 mg phosphorus;
618 mg sodium;
51 mg potassium.

Consisting of the eggs of the white sturgeon, this delicacy is a comparatively rich source of protein, an excellent source of sodium, and one of the few food sources of vitamin D. Since high-sodium foods should be avoided when blood pressure is high or blood sugar is low, caviar should definitely not be on everyone’s diet. Although easily assimilated by the body, caviar has a high calorie count and even higher price that would prevent it from becoming a nutrition staple.
