A fuzzy skinned fruit with a delicate flavor, peaches can be served fresh, sliced with cream, in ice cream or yogurt, for peach cobbler or pie, in fruit salads and compotes, or as peach melba but they provide the best nutrition if eaten fresh, since cooking often depletes nutritional values. Peaches are a good source of vitamin A, an aid to good night vision, healthy skin, growth, and maintaining the health of the linings of the mouth, nose, throat, and lungs and thus helpful against respiratory infections; of potassium, for good muscle tone, proper heart action, and for the enzyme reaction needed to change sugar into energy in the body; and of niacin, an aid to the proper functioning of the nervous system and for healthy, clear skin. Peaches provide a good amount of iron, and are about half as potent as liver against anemia. Peaches are low in calories and provide a good amount of fruit sugar, easily assimilated by the body and used for energy making peaches especially good for dieters, both for satisfying sweet tooth urges and for warding off feelings of fatigue and symptoms of low blood sugar.
