Probably one of the most served vegetables in restaurants and many homes, peas are often abused in cooking by being boiled into starchy, tasteless, soggy lumps no wonder some kids grow up hating them! They should be steamed or cooked in milk to preserve their natural flavor and sweetness. Peas are among the starchier of the green vegetables and are also moderately high in calories, but they do provide a good amount of nutrients. They are rich in incomplete protein, especially beneficial when eaten at a meal with a source of complete protein. They also provide vitamins, including B-1, for proper growth and digestion and normal functioning of nerves, heart, and muscles; B-2, for general health, especially of the skin and eyes; and niacin, for proper functioning of the nervous system and digestive tract, for healthy skin, and for the body’s utilization of sugar. Peas also provide a number of minerals, such as iron for prevention of iron deficiency anemia; sulphur for healthy hair, skin, and nails; and magnesium for normal functioning of muscles and nerves. Peas also provide a good sodium potassium balance, helpful in the prevention of both high and low blood pressure and water retention. Some varieties of peas have edible pods, much like string beans; in others only the immature green seed is eaten. Peas can often cause an allergic reaction, perhaps because of their protein content.
